I know people that grow it who grow it in containers so it doesn't escape into the rest of the garden. <br /><br />Funny you should mention the Freihofers bread wagon. I remember it very well from my childhood in Schenectady. I just came back from Old Songs Festival which is held every year at the Altamont Fairgrounds in Altamont NY. The fairgrounds has one of those wagons in the carriage display building which Old Songs uses as a daytime stage. The wagon is pretty worn out but it looks just like what I remember. I've got a photo of it somewhere. Here are some of my secrets. <br />1. soak the horseradish root overnight in cold water--I use a lobster pot and add ice.<br />2. peel with a vegetable peeler and then cut with a huge serrated knife to grindable portions<br />3. First use the blade that shreds the radish into long slivers--I don't remember what that blade is called but the result is like shoestrings. Put the result in a big plastic bowl<br />4. change the blade to the chopping blade<br />5. slowly add the shoestring radish to the chopper and add pure vinegar PLUS one tablespoon of white sugar per batch.<br />6. chop to the consistency you like.<br />7 spoon into 4 oz.canning jars and tap the jars so the mix settles--add a bit of vinegar if the mixture appears to dry.
